Farmers breakfast – Bauernfrühstück



A farmer breakfast is a simple but tasty dish from roasted potatoes, eggs milk belly bacon, ham or also smoke meat. All ingredients in a pan are mixed and refined like an omelette or a scrambled egg. Typical supplements are tomato salad or spice cucumbers.

1.2 kg(2 1/2 lb) waxy potatoes
8 Large Eggs
125ml(1/2 cup) milk
250g (1/2 lb) boiled ham, bacon or chasseur sausage
100g lard
salt and pepper to taste
1 chopped onion
4 spiced cucumbers

for garnishing : salad, parsley tomatoes and chives

Farmers Breakfast

Start with cleaning the potatoes with cold water in a sink. Then heat a large Stockpot with boiling water and the potatoes. Don’t peel the potatoes. The Potatoes may need 20 to 30 minutes to boil. When done, pour of the water and let the potatoes cool for a moment. Then start peeling them and cut into slices. Cut the ham or bacon into dices. Take a skillet which is nearly 10 inches in diameter and heat two tablespoons of vegetable oil in it. Add 1/4 of the boiled ham, bacon or chasseur sausage whatever you want to use, 1/4 of the lard and 1/4 of the onion. We will show frying the farmer’s breakfast here one by one. If you are experiences you can use two skillets at the same time, but it may scorch or bur very fast that way. So fry the ingredients in the hot oil now for 1 or two minutes then add 1/4 of the potatoes slices. Fry the potatoes till they become gold brown. In-between take a small bowl and mix two large eggs(if you only have small sized eggs, better take three) with two tablespoons of milk and some salt and pepper. Whisk to get a smooth liquid. If you want you can take 4 small bowls or dishes and premix the egg liquid. If you want to mix in a large bowl you have to measure to get sure you have four equal parts of liquid for your four farmers breakfasts. When the potatoes are fried gold brown pour your egg liquid in the skillet. Move the small bowl in a circle over the skillet while pouring the liquid in, so the egg mixture ca sink between the potatoe slices and form a closed surface and stick all the potatoes together. Now cook for another 3 or 4 minutes till the egg starts to stick, when the egg mixture is firm at the edges, you can lift it up a little bit with a spoon and look below if it starts to brown. Usually the egg in the upper middle is still liquid now while the bottom already starts to brown. So reduce the Heat now to low and let simmer for a while, if you which you can add a lid. Be careful not to let the egg scorch now. When done take a plate or dish shake your skillet to detach the egg from the bottom and lean your skillet towards the plate. Shake carefully till the farmer’s breakfast sits half at the plate and still half in the skillet, then turn around the skillet and bend the farmer’s breakfast over so it rests closed at the plate. If your meal sits under the table now or everywhere on the table but not at the plate, you get 3 more chances now. You can take the skillet again as it is, add two tablespoons of oil and reheat, then add the other ingredients like before and start frying the second farmers breakfast.
Keep warm the farmers breakfasts you have already finished. For example preheat the oven to 80 degrees Celsius(170 degrees Fahrenheit).
Garnish the plates with tomatoes, chopped parsley and chives. The Farmers breakfast is traditionally also served with a fan of spiced cucumbers.
